Set right in the prime real estate of Sancerre, the village of Chavignol is synonymous with the local goat cheese, Crottin de Chavignol, and textbook dry Sauvignon Blanc. With a loaf or two from the boulangerie, Chavignol has everything necessary to nourish its few hundred residents. Among them are Yves Martin and his son Pierre, who farm almost 50 acres on two local terroirs: stony/chalky caillottés and clay/limestone terres blanches on south-facing vineyards that deliver intensely minerally, stony, steely, ripe citrus-laden fruit on the palate. The finish is racy but neither austere nor puckering. Pair with goat cheeses, simply dressed green vegetables, and fish.
