Not to be confused with Chardonnay-based Pouilly-Fuissé over in Burgundy, the village of Pouilly-sur-Loire was once the rage in Fumé Blanc (Sauvignon Blanc) and even more famous than its neighbor, Sancerre. Firmin is the 18th generation of the Dezat family, who continues to make both Sancerre and smoky, steely, flinty, crisp Pouilly-Fume on 20 acres of terres blanches (chalk), caillotes (a gravelly limestone-based soil), and silex (flint) soils. Hints of lime, gooseberry, and fresh herbs pair perfectly with fish & herb dishes.
