Making Les Capriades Pet-Sec is science and art, requiring skill in choosing the best Chenin, Chard, and Menu Pineau from growers around Faverolles-sur-Cher, allowing yeast to do its magic, and knowing when to bottle during a single fermentation. After several months, the bottles are riddled and disgorged before being capped off with a handy resealable stopper. Notes of pear pastry, lemon curd, apple skins & cores, tannins, and floral notes over soft bubbles. Although the wine is only 9.8 ABV, it has only the slightest touch of residual sugar. Low Sulfites.
