Named after a horse, Noble Kara is another rosé that can stand in for a red wine. Instead of using juice from young fruit and processing quickly, Maria Sole harvests 100% fully-ripe Sangiovese from three parcels and lets it macerate on the skins for 24 hours before pressing and spontaneous fermentation in steel. Noble Kara is deep, dense, and wonderfully quaffable, like a very young Chianti with notes of cherry, pomegranate, raspberry, earth, and some tannic grip with plenty of acidity. We tasted it over the course of three days, and it was still evolving. No fining or filtration, and a minimum of sulfur. Chill and pair with pasta, hearty soups, salumi, and antipasto.
