The Two Dunes project by Giampiero Diruggiero and Marisa Mastrosimone is based out of their cantina in Umbria, where wines are as low-intervention as possible: gravity bottling, and no stabilization, filtration or any added SO2. Named after a cactus that yields edible prickly pears, Ficus is a co-ferment of Grechetto (60%) and Sangiovese that spends just two days on the skins before manual pressing, then spontaneous fermentation and aging in steel. This “real wine” presents with a Sherry-like amber hue followed by notes of dried wild strawberry, raspberry, and currants. Delicate yet weighty, Ficus does not impose itself, so it’s easy to pair with just about anything. 11% ABV.
