Clos Troteligotte (the walled vineyard of the doves) is a ten-acre estate located in Cahors, where Emmanuel Rybinski and his family run a self-sustaining farm that produces grains, livestock, hemp, wood, fruit & vegetables, and, of course, wine. Come and visit the estate, sample some wine, take a nature walk, practice yoga, stargaze, and perhaps enjoy live music. The Delit-K (deh-lee-ka, pronounced like “Delicat” in French) embodies this vibe: 50/50 whole-cluster Malbec/Merlot, processed in cement without any additives, and made to drink right away with a slight chill. If you like Beaujolais, you'll love the crunchy, dark fruit with a touch of structured Malbec tannins. Food pairing? Just about anything in your fridge. Unfined, unfiltered, no added sulfites. 12.2 % ABV.
