Gianluca Bergianti founded Terrevive in 2008 with 24 biodynamic acres of vineyards and 62 acres of polyculture farmland. The property is near Modena, in the village of Gargallo di Carpi in Emilia-Romagna's Lambrusco country, but this is not your "grandparent's Lambrusco." Terrevive No Autoclave is alive and bursting with all-natural flavor from indigenous grapes: Lambrusco Salamino di Santa Croce, blended with Lambrusco di Sorbara and the autochthonous white grape Pignoletto. It's classico method (second fermentation in bottle) with no added yeasts, extra sugars, or acids. It is pure, pure, pure dark fruit with hints of funk, alpine herbs, cherries, citrus, and rocking acidity over fine bubbles. This may not be a conventional aperitif wine, but it is a natural pairing with spicy dishes, such as Copa, salumi, strong cheeses, pizza, and grilled foods. Serve this red bubbly well chilled.
