Husband and wife team Tom & Marilyn Stolpman dreamed of owning a winery while honeymooning in Napa in the 1980s. Well, dreams come true, and the couple founded Stolpman Vineyards in Ballard Canyon AVA of Santa Barbara County a few years later. With the help of local talent, the Stolpmans have created a multitude of organic wines under the categories of Stolpman Estate, Solorzano Projects, Classics, Combe, and La Cuadrilla.
The Combe line is an experiment in growing unusual varietals in the dry climate of Ballard Canyon. Usually found in Arbois and Savoie, this rosey blend of Trousseau and Mondeuse (20%) is chuggable, lightly fizzy, bottle-conditioned bubbly with loads of berries, tropical fruit, and chalky minerals. The ABV is only 11.5%, so it's easy to finish a bottle of steely, prickly, vivacious Pet-nat in one sitting.
