Chenin expresses itself in many forms: bone-dry, savory, funky, bubbly, off-dry, and unctuously sweet. One might expect a Chenin with 11% ABV from Carmel Valley (approximately 20 miles inland from Monterey) to be lush and juicy, but Margins portrays it in its raw state, with prominent apple acidity and notes of green pear. Made with whole-cluster fruit from the high-elevation Massa Vineyard, Megan Bell ferments in steel with native yeasts and ages primarily in neutral oak, resulting in a low-intervention, organic wine that is left unfined and unfiltered.
