Europeans aren't the only ones who can make interesting Pet-nats. Yes, they have classic varietals and excellent terroir, but California's gems are still waiting to be discovered. Andrew Jones, the owner of Field Recordings, has a dual career as a winemaker and vine nursery fieldman who scouts and plans new vineyard sites in California. By observing undiscovered pieces of land, Andrew can predict their potential for producing great wine. In return for his talents, clients sometimes offer him small lots of fruit. Salad Days is a laid back blend of "Organic Wine Grapes and Sparkling Yeast", but the rumored blend is Colombard, Chenin, and Chard fermented in steel for 45 days and then bottled for bubbles. Notes of Gooseberry, lychee, apple, lime, and herbs. Salad Days would make a great pairing with greens, herbs, and hard-to-pair items like asparagus and cilantro. Try it with Ceviche!
