Isabel Lufinha Mota Capitão and Luís Mota Capitão make Cebolal on their 135-year-old regenerative farm along coastal Alentejo. Palhete (pahl-yay-tay) is their classic Portuguese style of wine that includes both red and white grapes, in this case, co-fermented Aragonês (Tempranillo) and Antão Vaz (15% white variety). Though most of the blend is Tempranillo, the wine is more rosy than red, making for a year-round, snappy, bright, chillable bottle for fish, white proteins, and Mediterranean foods.
