Relative to the 8,000-year Georgian wine timeline, Gaioz Sopromadze started his family cellar a minute ago in 2006. However, the wines continue to be old-fashioned, rustic, and vinified/aged in kvevri (clay amphora). Made in the eastern region of Imereti close to the Black Sea, 6X is a blend of 20% Tsolikouri Mtsvane (green), 20% Tsolikouri Melqo (yellow), 20% Tsiska (yellow), 20% Tsiska (green), 10% Krakhuna (green), 10% Krakhuna (yellow)—the grapes have different shades depending on exposure to the sun. Although there is no skin contact, clay pots allow 6X to develop deep golden hues with tinges of copper. The flavor is textured, high-toned, and complex with herbs on the introduction and softens into baked apples, pears, and dried orange towards the super dry finish. Pair with roasted meats, cheese & bread dishes, and white bean casseroles.
