In the world of Sherry, there is Fino, Amontillado, Oloroso, Palo Cortado, Cream, PX (Pedro Ximénez), and a few more in between, spanning the entire sweetness range. East India Solera is technically a Cream Sherry with moderate sugar, deep amber color with green hues, and high acids. The balance is achieved by blending a dry Oloroso and a sweet PX from a 12-year-old Solera rotation to recreate a 17th-century wine that originally sailed the oceans to the homesick Britons in Asia. Notes of treacle, salted black walnuts, burnt orange, and Christmas pudding. Pair with Tiramisu, cheesecake, spice cake, trifle, savories, and fruit desserts.
