Located across the Rhône River from Châteauneuf-du-Pape AOC, the region of Tavel is unique because it produces only rosé. The wine is so distinct that it has gained a following of notable like popes, kings, and artists—it must be because of Tavel's glorious color, flavor, and age-worthiness. Alexandre Hote once sent all the family fruit to a co-op, but then he decided to purchase an 11-acre plot next door and make all-natural wine rarely seen in Lirac and Tavel. Calcaire is a blend of whole cluster Grenache, Cinsault, Clairette, Mourvèdre, and Carignan that presents as a chillable light red. It is a berry patch of funky, dry, earthy, complex fruit, bottled unfined/unfiltered with no added sulfites. Try this with heavier fish dressed with tomato and olives, charcuterie, and poultry.
