Cabernet Sauvignon is grown all over California, and none are more iconic than those from Napa Valley, but they’re also some of the most expensive. So, we were thrilled when a half-bottle of proper Cali Cab came along. This $15 gem, from Paso Robles in San Luis Obispo County (Central Coast), is a "Textbook" Cab made by Abigail Estrada. The blend is 97% Cabernet Sauvignon, 2.9% Syrah, 0.1% Petite Sirah, fermented in steel and aged in French oak for 13 months. Enjoy this well-aged Cab with reasonable alcohol (13.9% ABV), density, and oak. A layered palate of plums, cherries, vanilla, and spices, with soft tannins.
