In 2007, Stéphane Regnault took over his family plots in Le Mesnil-sur-Oger (Côtes des Blancs) and started making close-to-the-heart Champagne on 10 acres of certified organic & biodynamic vineyards. Chromatique is a snapshot of his land and cellar in one cuvée: It's 100% Grand Cru Chardonnay from 2019 (65%) supplemented with a perpetual reserve. After three years of resting on the less, Chromatique was disgorged and topped off with a dosage of 3.5 g/l. Notes of stones, flowers, freshly cut grass, sourdough bread, lemons, Rainier cherries, and white peach. A crisp linear bubbly that goes with everything, from fancy cheeses to popcorn and fried chicken.
