Brought to you by the Cistercian nuns at the Monastero Suore Cistercensi in Lazio, Coenobium is their organic blend of co-fermented Trebbiano, Verdicchio, and Malvasia. Although the Sisters receive a little commercial guidance from the Umbrian legend Giampiero Bea (Paolo Bea's son), their wine is as "low-intervention" as it gets -- in the vineyard and cellar. Vinification and aging are done in steel and fiberglass, and the whole process is completed by the next harvest. Coenobium is fresh, vibrant, and full-bodied with a deep golden hue and complex notes of volcanic earth, dried citrus, anise, rosemary, pine resin, marzipan, and plenty of acidity. Pair with roasted whole fish or chicken slathered in olive oil, lemon, and herbs.
