We've finally met all your Listan needs: red, white, and now rosé. If you've never had Listan varietals (aka Palomino) from the Canary Islands of Spain, you must familiarize yourself with its volcanic wines. Ignacio Valdera makes Bermejos on the island of Lanzarote, only 78 miles west of the African coast. Lanzarote is essentially one big volcano surrounded by a build-up of old ash and solid lava that covers the unblemished ground below. Each vine requires digging a hole into the lava to access the soil's nutrients. Even with all this effort, the yields are very woefully low. The final wine is a refreshing departure from the usual rosé with lots of dark smoky fruit, sage & rosemary, grilled peaches, balanced acidity, and a cool amphora-shaped bottle. Pair with any summer foods.
