Karim Vionnet's goal is to achieve purity with the least amount of intervention. It shows in this fresh, high-toned, precise Villages. Whole cluster Gamay from Morgon, Chiroubles, Fleurie, and Regnie undergoes a full carbonic maceration for 2-3 weeks. Fermentation is spurred by native yeast, and the wine is aged for 6 months in concrete tanks before being bottled unfiltered. That's it. A bit of aging has brought forth some of the more nuanced flavors, but cherries, pomegranate, kirsch, and savory earth notes dominate in this lighter-medium-bodied Beaujolais. Considering Karim's North African roots, I think he would agree that spicy, fatty, Marquez lamb sausages would make a great pairing. Serve cool.
