Although Bulbille is classified as a Vin de France, it comes from just outside the Cru village of Cairanne, but don't expect the usual Côtes du Rhône. Bubille (young bud) is early-harvested, co-fermented Counoise (55%) for crispness, 33% Cinsault for acidity, and 15% Grenache for the Rhone’s unmistakable perfume and spice. The blend undergoes semi-carbonic maceration in cement tanks and ages in cement for eight months before bottling. Bulbille is crisp, light, and low in alcohol (12.5% ABV) and sulfites. Chill this zippy, bright wine and serve with lighter fare.
