Antxiola (ahn-cho-la) Rosado is steel-fermented Hondarrabi Beltza left to macerate on the skins to extract body, flavor, and salmon-pink color. The vines are planted in clay soils on sunny hillsides above the Bay of Biscay, where the Basque Country borders France. Although most Txakoli (cha-koe-lee) is white wine, the region's red and rosé are gaining popularity. Anxtiola Rosado is dry and slightly effervescent with notes of cherry, wild berries, smoky spices, minerals, and a hint of salinity. Serve chilled with paella, grilled chicken and fish, appetizers, and summer fare.
