Cousins Edgar González Ramírez and Elisandro González Molina started Mezcal Tosba as a way to preserve their village of San Cristobal Lachirioag in the Sierra Juárez mountains. Without economic opportunities, young people migrate and communities disappear. Traditional distillation keeps the culture safely moored as the cousins work to make education, financial services, and technology more accessible. Otherwise, Tosba is old school: Agave fired in an earthen pit oven with driftwood, milled with a horse-drawn stone wheel, fermented in open pine vats, and distilled twice using traditional copper pot stills. As a subspecies of Espadin, Espadilla delivers notes of green pineapple, pine, papaya, ripe plantain, herbs, and goat cheese with a refreshingly astringent finish of banana and mango skins, baking spice, and light smoke.
