Tequila, Bacanora, and Raicilla are all agave-based spirits that fall under the umbrella of Mezcal. Then there's Sotol. Unlike Mezcal, Sotol is made with another desert plant named Dasylirion. This bush has a fermentable core and grows into the northern Mexican states of Chihuahua, Coahuila, and Durango. From Gerardo Ruelas in Aldama, Chihuahua, this 94-proof Blanco Sotol is made of Dasylirion Cedrosanum cores baked in stone and wood ovens, fermented in pin vats with wild yeasts, and distilled in copper alembic stills. There is flavor similarity to Mezcal with hints of roasted fruit, but Sotol is smoother and more herbal, grassy, and woody.
