Poitin (pot-cheen) is one of the oldest forms of distilled alcohol, dating back to 600 AD in Ireland. Monks and nuns were the first distillers before Poitin was outlawed a thousand years later, but the tradition continued in rural areas on windy, stormy nights when authorities couldn't trace the peat fires. Maura Clare named her brand after her cousin, an Irish Franciscan nun, who smuggled Poitin back to the US as a bottle of holy water. The modernized recipe of fine Irish malted barley, beet sugar, molasses, and Irish spring water was developed by ex-bootlegger Michael McIlhatton, creating a clear, smooth, grainy, aromatic spirit that can step in for vodka, gin, or even whiskey.
