We're not letting this anise/licorice aperitif disappear into the back of history's liquor cabinet. "The real pastis from Marseille!" was introduced to the masses in 1932 by Paul Ricard as a substitute for the era's dangerous and eventually outlawed Absinthe. Pastis remains an old-school product that's diluted with cold water (which turns it milky), sometimes sweetened with sugar cubes, and drunk either straight or mixed into cocktails such as the Sazerac, Eastern Manhattan, Colony Room, and Cul de Sac. In a pinch, it can also stand in for Ouzo, Arak, or Rakı.
