While there are similarities among Japanese Shōchū, Korean Soju, and Chinese Baijiu, they differ in base ingredients, ABV, flavor, and production. Soju is a clear spirit similar to vodka and proofed between 12.5%-53% ABV. It can be distilled from tapioca, cassava, rice, or sweet potatoes. Although rice was the traditional ingredient, it had always been reserved and protected as a food source, with Bori (barley) serving as an emergency backup grain in times af famine. As the demand for barley decreased, it was repurposed as a base for high-quality Soju.
Made by Hwannggeum Bori in the central-western region of Chungcheongnam, South Korea, White Label 17 is light, plummy, crisp, and refreshing, with a hint of ginger zing.
