Although it might sound like it, Cardamaro does not taste like cardamom. This Piemontese recipe is based on cardoons (artichoke thistle), Saint Mary's thistle, herbs, and spices, all steeped in Moscato wine and aged in oak for six months. It's a unique flavor sensation that will grow on you with oak tannin, bitter herbs, and balanced acidity. The finish is a cross between vermouth, dry sherry, and even a little aged port.
