Valdespino is a historic bodega named after Don Alfonso Valdespino, a 13th-century knight who settled in the heart of Jerez. This part of southern Spain is known for its pure Albariza soils of bright white chalk, perfect for crafting distinct single-estate Sherries. Inocente is 100% Palomino from the Macharnudo Estate fermented in old oak for one year before it ages for ten years in the Solera. It is one of the oldest Finos and the last naturally fermented in casks. "Fino" Sherry is always dry, but Inocente has added complexity behind chalk, herbal tea, oyster shell, and salted almonds. Serve cold with almost any savory food, raw fish, fried food, olives, Chorizo, and sardines.
