Bordelet Cider was one of the first high-quality brands imported from Normandy over 20 years ago. Eric Bordelet and family continue the old traditions on 19 hectares of family property around Château de Hauteville, plus another 22 hectares of orchards that will be ready in time for the next two generations of cider makers. In addition to Sidre from dozens of century-old apple varieties, Bordelet also makes a Poire (pear cider). From 40-50-year-old trees planted in granite soils, Authentique is a blend of hand-harvested heirloom pears, which are dried out for a month before pressing and one continuous fermentation from tank to bottle (like Pet-nat). This Poire is off-dry and aromatic with a foamy mousse that goes perfectly with cheese boards, fruit tarts, pies, or highly spiced savory dishes.
