The Languedoc region of southern France is the source of many high-quality value-driven wines. But when it comes to noble varietals such as Burgundy's own Pinot Noir and Chardonnay, some producers tend to adorn their wines with lots of toasted oak and overripe fruit to mimic other regions. Mathieu Paquet, a Burgundian winemaker from Mâcon, chooses instead to highlight Languedoc's qualities by sourcing the best fruit from clay/limestone soils and vinifying his wines completely in steel from fermentation through aging.
