The old-school Gattinara bottle is one of the coolest in the store. Since it's from Barbaresco, the wine is probably 100% destemmed Nebbiolo, but without confirmation by the rebellious Fabio Gea, Cul Otte can't be classified as such. Furthermore, the wine is fermented and aged in homemade porcelain and stoneware vessels instead of steel and wood. What you get is pure, youthful, brisk, intense, crunchy, dark fruit with touches of earthiness. Medium-bodied, unfined, unfiltered, and low in sulfites. Pair with fowl, red meat, and pasta with mushrooms.
