When Rémi Branger and Gwénaëlle Croix took over the property made legendary by Marc Ollivier, they continued the tradition of highlighting specific vineyards, a somewhat unusual practice in a region dominated by bulk producers. Les Gras Moutons (the fat sheep) is a 4-acre vineyard within the Cru of Monnières-St. Fiacre with soils of clay, sand, and gneiss. Grown on vines with an average age of 45 years, hand-picked Melon de Bourgogne is fermented in steel and aged in glass-lined cement tanks for nine months. This is a denser Muscadet with lush white fruit, citrus, herbs, almonds, and flowers framed by crisp acidity. Pair with fish, shellfish, and poultry dressed with lemon and herbs.
