Ireland is the world's third-largest producer of cheese. Whey is the liquid left over once cheese curds form. Justin Green and Antony Jackson of County Cork launched Ballyvolane (Gaelic for 'the place of the leaping heifers'), which uses whey instead of grain to make gin flavored with cumin, coriander, juniper, citrus, licorice, orris, angelica, cinnamon, cardamom, cloves, almond, elderflower, and Grains of Paradise. Named after a cow who lived to 48, Bertha's Revenge is smooth at 84 proof and has an elaborate nose followed by a soft, spicy palate. Make a G & T and pair with it Indian take-out.
