Sake is the skillful combination of water, rice, and Koji fungus, the precursor that converts rice starches into simple sugars to create alcohol, but the real flavor is dictated by the selected yeast. Tsuji Zenbei Junmai is made by the 16th generation of the Tsuji family with well-water from the Tochigi Prefecture (60 miles north of Tokyo), Gohyakumangoku rice polished to 65%, and fruit-driven Première de Mousse Champagne yeast, the most essential and dominant ingredient in this brew. Even if you dislike other Sakes, every wine lover will appreciate this Junmai's off-dry palate of honeydew, citrus, flowers, pears, herbs, and green plums. 13.6% abv.
