Sporting a shogun warrior on the label, Tomita is Japan's third-oldest sake brewery, founded in 1540. The current Toji, Yasunobu Tomita, is the 15th generation of the family and the brewmaster. His Shichi Hon Yari Junmai is a balance of rich and creamy umami texture with crisp and bright citrus acidity. Serve room temperature with traditional Japanese cuisine, duck, Korean Steak Tartare, and mushroom risotto.
