Rice for Mystery is milled down to 45% of its original size for the best quality Koji making, which takes two full days to develop. The brewmaster then adds apple yeast to the moromi (the main mash) for the signature notes of preserved fruit, olive, and honey. The palate is soft yet expressive, and the finish light and delicate. Drink chilled, room temperature, or warm as an aperitif or serve with sashimi, chicken, pork, and light fruit desserts.
