The common thread between Pecorino cheese and wine is "Pecori," or sheep. In this case, Pecorino (little Sheep) is the name of the grape that grows along the Adriatic coast on the Pescaresi hills of Abruzzo. It's a place where animals graze among the vines, warm ocean breezes keep grape bunches well-ventilated, and the bright sun matures berries to a golden hue. The low-intervention Bianco is deeply colored with notes of savory herbs, seawater, grapefruit pith, and a touch of animal funk. Low sulfur, unfined, and unfiltered. Pair with fish dishes featuring herbs, garlic, and olive oil, or pasta topped with black pepper and grated Pecorino.
